Spinach Saag

Ingredients

- 1 (8 ounce) box frozen spinach
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 chopped tomatoes
- 1/2 teaspoon minced garlic clove
- 1/2 teaspoon ginger paste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder (indian red chili powder, not regular)
- 1/2 cup plain yogurt
Recipe
- 1 boil spinach until most all of the water has boiled out, set aside. (puree spinach in food processor or blender).
- 2 saute onions until golden. add tomatoes, ginger and garlic. mix well, add dry seasoning.
- 3 stir constantly until it thickens, then add spinach, mix well.
- 4 cook 2 minutes. salt to taste.
- 5 turn off heat, add plain yogurt a little at a time.
- 6 serve with basmati rice.
