Spinach Saag

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 (8 ounce) box frozen spinach
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 chopped tomatoes
  • 1/2 teaspoon minced garlic clove
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (indian red chili powder, not regular)
  • 1/2 cup plain yogurt

Recipe

  • 1 boil spinach until most all of the water has boiled out, set aside. (puree spinach in food processor or blender).
  • 2 saute onions until golden. add tomatoes, ginger and garlic. mix well, add dry seasoning.
  • 3 stir constantly until it thickens, then add spinach, mix well.
  • 4 cook 2 minutes. salt to taste.
  • 5 turn off heat, add plain yogurt a little at a time.
  • 6 serve with basmati rice.
