Super Easy Black Bean Burritos

Ingredients
- Servings: 4
- 1 (15 ounce) can black beans, drained and rinsed well
- 1/2 cup salsa
- 1 cup cooked brown rice
- 4 flour tortillas, burrito size
- 1 cup lettuce
- 1 tomato, diced
- 1 avocado, diced or mashed
Recipe
- 1 combine the black beans, salsa, and the rice in a saucepan and simmer for 5 minutes.
- 2 remove from heat, cover, and let sit for 5 minutes.
- 3 in an ungreased skillet (or microwave), heat a tortilla until warm.
- 4 spread a line of the bean mixture down the center.
- 5 top with lettuce, tomato, avocado, and more salsa if desired.
- 6 roll up and enjoy!
