Super Easy Black Bean Burritos

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (15 ounce) can black beans, drained and rinsed well
  • 1/2 cup salsa
  • 1 cup cooked brown rice
  • 4 flour tortillas, burrito size
  • 1 cup lettuce
  • 1 tomato, diced
  • 1 avocado, diced or mashed

Recipe

  • 1 combine the black beans, salsa, and the rice in a saucepan and simmer for 5 minutes.
  • 2 remove from heat, cover, and let sit for 5 minutes.
  • 3 in an ungreased skillet (or microwave), heat a tortilla until warm.
  • 4 spread a line of the bean mixture down the center.
  • 5 top with lettuce, tomato, avocado, and more salsa if desired.
  • 6 roll up and enjoy!
