Ingredients

- 1 tablespoon oil
- 500 g beef mince
- 1 onion (sliced)
- 2 teaspoons garlic (minced)
- 2 teaspoons ginger (minced)
- 1 chili (finely chopped)
- 1 teaspoon paprika
- 750 ml tomato juice
- 2 cups beef stock
- 1/3 cup red wine
- 1 large potato (cubed)
- 2 carrots (sliced)
- 1 cup soup mix
- 1 cup risoni (optional)
- 1/2 cup kidney bean (optional)
Recipe
- 1 heat oil in a large saucepan. add onion, garlic, ginger & chilli. stir for 30 seconds and then add mince. use medium heat.
- 2 once the mince is mostly cooked, pour in the tomato juice and paprika and stir through. then add everything else except the risoni.
- 3 cover and leave to cook through for as long as it takes, close to 30 minutes depending on how large your chunks of potato are.
- 4 when the potatos are nearly cooked through, add the risoni if you are going to.
- 5 wait until the risoni is done and then serve.
- 6 enjoy.
