Soupy Sludge Of Yum!

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 500 g beef mince
  • 1 onion (sliced)
  • 2 teaspoons garlic (minced)
  • 2 teaspoons ginger (minced)
  • 1 chili (finely chopped)
  • 1 teaspoon paprika
  • 750 ml tomato juice
  • 2 cups beef stock
  • 1/3 cup red wine
  • 1 large potato (cubed)
  • 2 carrots (sliced)
  • 1 cup soup mix
  • 1 cup risoni (optional)
  • 1/2 cup kidney bean (optional)

Recipe

  • 1 heat oil in a large saucepan. add onion, garlic, ginger & chilli. stir for 30 seconds and then add mince. use medium heat.
  • 2 once the mince is mostly cooked, pour in the tomato juice and paprika and stir through. then add everything else except the risoni.
  • 3 cover and leave to cook through for as long as it takes, close to 30 minutes depending on how large your chunks of potato are.
  • 4 when the potatos are nearly cooked through, add the risoni if you are going to.
  • 5 wait until the risoni is done and then serve.
  • 6 enjoy.
