Spiced Rice With Lentils

Ingredients

- 1 cup brown basmati rice
- 1 cup lentils
- 1 medium onion, halved and thinly sliced
- 1 tablespoon chopped fresh ginger
- 2 teaspoons chopped garlic
- 1 dried red chili
- 3/4 teaspoon ground turmeric
- salt
- 2 tablespoons fresh lemon juice
Recipe
- 1 in large nonstick saucepan, saute onion for 2 minutes or until translucent.
- 2 add ginger, garlic, dried red chile, and turmeric. stir fry 1 minute. add rice and lentils. stir gently to mix.
- 3 add boiling water to cover ingredients by 1/2 inch. bring back to boil, reduce heat, and simmer, covered, 45-50 minutes or till liquid is absorbed and rice and letils are tender.
- 4 remove mixture from heat and let sit, covered, about 5 minutes. fluff gently with fork.
- 5 drizzle with lemon juice and garnish with chopped cilantro, if desired.
