Spiced Rice With Lentils

Ingredients

  • Servings: 4
  • 1 cup brown basmati rice
  • 1 cup lentils
  • 1 medium onion, halved and thinly sliced
  • 1 tablespoon chopped fresh ginger
  • 2 teaspoons chopped garlic
  • 1 dried red chili
  • 3/4 teaspoon ground turmeric
  • salt
  • 2 tablespoons fresh lemon juice

Recipe

  • 1 in large nonstick saucepan, saute onion for 2 minutes or until translucent.
  • 2 add ginger, garlic, dried red chile, and turmeric. stir fry 1 minute. add rice and lentils. stir gently to mix.
  • 3 add boiling water to cover ingredients by 1/2 inch. bring back to boil, reduce heat, and simmer, covered, 45-50 minutes or till liquid is absorbed and rice and letils are tender.
  • 4 remove mixture from heat and let sit, covered, about 5 minutes. fluff gently with fork.
  • 5 drizzle with lemon juice and garnish with chopped cilantro, if desired.
