Spiced Rice

Ingredients

- 2/3 cup uncooked long grain rice
- 1 1/4 cups water
- 3/4 cup chopped onion
- 1 1/2 teaspoons olive oil
- 1 1/2 teaspoons honey
- 3/4 cup reduced-sodium chicken broth
- 1/4 cup golden raisin
- 1 teaspoon curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 cup chopped red bell pepper
Recipe
- 1 bring rice and water to a boil. reduce heat and simmer until water is absorbed.
- 2 saute onion for 1 minute. add honey and cook 2 minutes longer. stir in the broth raisins, curry, salt, cumin, and cinnamon. bring to a boil. reduce heat; simmer, uncovered, 5 minutes. stir in red bell pepper and rice until well blended and rice is heated through.
