Spiced Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2/3 cup uncooked long grain rice
  • 1 1/4 cups water
  • 3/4 cup chopped onion
  • 1 1/2 teaspoons olive oil
  • 1 1/2 teaspoons honey
  • 3/4 cup reduced-sodium chicken broth
  • 1/4 cup golden raisin
  • 1 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup chopped red bell pepper

Recipe

  • 1 bring rice and water to a boil. reduce heat and simmer until water is absorbed.
  • 2 saute onion for 1 minute. add honey and cook 2 minutes longer. stir in the broth raisins, curry, salt, cumin, and cinnamon. bring to a boil. reduce heat; simmer, uncovered, 5 minutes. stir in red bell pepper and rice until well blended and rice is heated through.
