Spiced Roast Chicken Breast

Total Time: 31 mins Preparation Time: 5 mins Cook Time: 26 mins

Ingredients

  • 2 boneless chicken breast halves
  • 1/2 teaspoon ground cayenne pepper (or to taste)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 1/2 tablespoons vegetable oil
  • 3 tablespoons water

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 pat chicken dry.
  • 3 mix together your spices along with 1 1/2 tsp of the oil.
  • 4 rub spice mixture over chicken.
  • 5 heat the remaining oil in a heavy ovenproof skillet over moderately high heat.
  • 6 brown chicken on both sides (approximately 5 minutes).
  • 7 transfer the skillet to the middle of the over and roast chicken 16-18 minutes.
  • 8 transfer chicken to a clean plate.
  • 9 add water to the pan and de-glaze over high heat, scraping up brown bits.
  • 10 pour pan juices over chicken (or rice if served as a side).
