Spiced Roast Chicken Breast

Ingredients
- 2 boneless chicken breast halves
- 1/2 teaspoon ground cayenne pepper (or to taste)
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 1/2 tablespoons vegetable oil
- 3 tablespoons water
Recipe
- 1 preheat oven to 450 degrees.
- 2 pat chicken dry.
- 3 mix together your spices along with 1 1/2 tsp of the oil.
- 4 rub spice mixture over chicken.
- 5 heat the remaining oil in a heavy ovenproof skillet over moderately high heat.
- 6 brown chicken on both sides (approximately 5 minutes).
- 7 transfer the skillet to the middle of the over and roast chicken 16-18 minutes.
- 8 transfer chicken to a clean plate.
- 9 add water to the pan and de-glaze over high heat, scraping up brown bits.
- 10 pour pan juices over chicken (or rice if served as a side).
