Rice With Coconut Milk

Ingredients

- 2 cups jasmine rice
- 2/3 cup coconut cream
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 2/3 cups coconut milk
Recipe
- 1 rinse rice in several changes of water.
- 2 drain, discard water and set aside.
- 3 in a medium pot, over medium heat, bring coconut cream to a boil.
- 4 add rice, sugar and salt.
- 5 add coconut milk and return to a boil.
- 6 cook, partially covered, stirring occasionally, about 3 minutes.
- 7 reduce heat to low and simmer, covered, stirring occasionally, 15 to 20 minutes, or until all the liquid has been absorbed and the rice has fluffed.
