Spinach Tortellini Soup

Ingredients
- Servings: 4
- 2 (14 ounce) cans chicken broth
- 2 (14 ounce) cans diced tomatoes seasoned with basil garlic & oregano (undrained)
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 (10 ounce) package frozen spinach (thawed)
- 1 (8 ounce) package tortellini (any flavor)
Recipe
- 1 in stock pot, heat olive oil and saute minced garlic.
- 2 add the two cans of chicken broth and undrained tomatoes. bring to slight boil.
- 3 add tortellini and cook until they puff up (and they will).
- 4 add the spinach and heat until hot.
- 5 **leftover soup will suck up the liquids. either add a bit more broth or a bit of water.
