Spinach Tortellini Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 (14 ounce) cans chicken broth
  • 2 (14 ounce) cans diced tomatoes seasoned with basil garlic & oregano (undrained)
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 (10 ounce) package frozen spinach (thawed)
  • 1 (8 ounce) package tortellini (any flavor)

Recipe

  • 1 in stock pot, heat olive oil and saute minced garlic.
  • 2 add the two cans of chicken broth and undrained tomatoes. bring to slight boil.
  • 3 add tortellini and cook until they puff up (and they will).
  • 4 add the spinach and heat until hot.
  • 5 **leftover soup will suck up the liquids. either add a bit more broth or a bit of water.
