Spinach Tortellini

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 16 ounces cheese-filled tortellini
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 3 tablespoons minced garlic
  • 9 ounces frozen chopped spinach (defrost)
  • 1/2 teaspoon dry basil
  • 1/2 teaspoon salt & pepper
  • 1 cup heavy whipping cream
  • 1/2 cup parmesan cheese

Recipe

  • 1 boil water for tortellini.
  • 2 add tortellini and while that is cooking in a frying pan saute onion and garlic in olive oil.
  • 3 put spinach in microwave for a minute or two and then squeeze water out of it.
  • 4 add spinach, basil, salt, and pepper to onion and garlic.
  • 5 saute additional 5 minutes.
  • 6 drain tortellini.
  • 7 add cream, parmesan cheese, and tortellini to pan.
  • 8 cover and simmer 10-15 minutes stirring occasionally.
