Spinach With Chicken And Rice (dutch)

Ingredients
- Servings: 4
- 450 g frozen spinach
- 1 cup yellow rice or 1 cup brown rice, uncooked
- 24 ounces chicken breasts
- 1 shallot
- 2 garlic cloves
- 4 ounces chestnut mushrooms or 4 ounces button mushrooms
- 4 ounces coarse salami or 4 ounces chorizo sausage
- 5 tablespoons olive oil
- salt & pepper, to taste
- 4 tomatoes
Recipe
- 1 thaw and drain the spinach.
- 2 cook the rice according to package directions.
- 3 peel and chop the shallot and the garlic.
- 4 rinse and slice the mushrooms and tomatoes.
- 5 dice the chicken breasts and season them with salt and pepper.
- 6 chop the salami or chorizo.
- 7 heat 2 tbsp of oil in a skillet and saute the shallot and garlic. turn down the heat, add the spinach and cook for 8 minutes on low.
- 8 heat the remaining 3 tbsp of the olive oil in another big skillet or wok and saute the chicken about 5 minutes.
- 9 add the salami or chorizo and mushrooms and fry for another 3 minutes.
- 10 add the cooked rice and spinach and mix well.
- 11 salt and pepper to taste.
- 12 top with slices of tomato and serve.
