Spinach With Chicken And Rice (dutch)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 450 g frozen spinach
  • 1 cup yellow rice or 1 cup brown rice, uncooked
  • 24 ounces chicken breasts
  • 1 shallot
  • 2 garlic cloves
  • 4 ounces chestnut mushrooms or 4 ounces button mushrooms
  • 4 ounces coarse salami or 4 ounces chorizo sausage
  • 5 tablespoons olive oil
  • salt & pepper, to taste
  • 4 tomatoes

Recipe

  • 1 thaw and drain the spinach.
  • 2 cook the rice according to package directions.
  • 3 peel and chop the shallot and the garlic.
  • 4 rinse and slice the mushrooms and tomatoes.
  • 5 dice the chicken breasts and season them with salt and pepper.
  • 6 chop the salami or chorizo.
  • 7 heat 2 tbsp of oil in a skillet and saute the shallot and garlic. turn down the heat, add the spinach and cook for 8 minutes on low.
  • 8 heat the remaining 3 tbsp of the olive oil in another big skillet or wok and saute the chicken about 5 minutes.
  • 9 add the salami or chorizo and mushrooms and fry for another 3 minutes.
  • 10 add the cooked rice and spinach and mix well.
  • 11 salt and pepper to taste.
  • 12 top with slices of tomato and serve.
