Shallot Caraway Rice

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 shallots, diced finely
  • 2 garlic cloves, minced
  • 1 tablespoon caraway seed
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1/8 teaspoon seasoning salt
  • 1/8 teaspoon black pepper
  • 1 cup rice
  • 1 (14 ounce) can chicken broth

Recipe

  • 1 in small or medium saucepan, heat oil and butter over medium heat.
  • 2 add shallots and garlic cloves, sauté 3 minutes.
  • 3 add caraway seeds, red pepper, garlic powder, salt, and pepper. sauté 2 minutes.
  • 4 add rice and entire can of chicken broth. stir, and bring to a boil.
  • 5 cook rice according to directions on package.
  • 6 *if using long grain rice, after bringing to a boil, cover, and simmer 20 minutes. take off heat and let sit covered for 5 minutes, then open lid and fluff with fork. serve hot.
