Rice Pudding

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 cup water
  • 1/2 cup short-grain rice
  • 5 cups milk
  • 2 teaspoons cornstarch
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 1/2 cup raisins
  • 1 tablespoon cinnamon

Recipe

  • 1 bring water to a boil in a saucepan.
  • 2 add rice and cover.
  • 3 reduce heat and simmer for 15 minutes or until water is absorbed.
  • 4 place rice in 4 1/2 cups of the milk in a large heavy saucepan.
  • 5 cook until milk just comes to a boil.
  • 6 meanwhile combine cornstarch with sugar and very gradually whisk in remaining 1/2 cup milk until mixture is smooth.
  • 7 whisk this mixture into hot rice milk mixture.
  • 8 reduce heat to low.
  • 9 cover and cook gently for 40 - 55 minutes, or until rice is very thick and creamy.
  • 10 add vanilla and raisins.
  • 11 pour into individual serving dishes or one large serving bowl.
  • 12 sprinkle with cinnamon,
  • 13 serve warm or cold.
