Rice Pudding

Ingredients
- Servings: 6
- 1 cup water
- 1/2 cup short-grain rice
- 5 cups milk
- 2 teaspoons cornstarch
- 1/2 cup granulated sugar
- 1 teaspoon vanilla
- 1/2 cup raisins
- 1 tablespoon cinnamon
Recipe
- 1 bring water to a boil in a saucepan.
- 2 add rice and cover.
- 3 reduce heat and simmer for 15 minutes or until water is absorbed.
- 4 place rice in 4 1/2 cups of the milk in a large heavy saucepan.
- 5 cook until milk just comes to a boil.
- 6 meanwhile combine cornstarch with sugar and very gradually whisk in remaining 1/2 cup milk until mixture is smooth.
- 7 whisk this mixture into hot rice milk mixture.
- 8 reduce heat to low.
- 9 cover and cook gently for 40 - 55 minutes, or until rice is very thick and creamy.
- 10 add vanilla and raisins.
- 11 pour into individual serving dishes or one large serving bowl.
- 12 sprinkle with cinnamon,
- 13 serve warm or cold.
