Rice With Broccoli And Tomatoes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 1/2 cups chicken stock
  • 1 cup long-grain rice
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 small onion, chopped
  • 1/2 lb fresh broccoli, coarsely chopped
  • 3 tomatoes, chopped
  • ground black pepper, to taste

Recipe

  • 1 in a saucepan, bring the stock to a boil.
  • 2 stir in the rice, butter, salt, onion and broccoli.
  • 3 reduce the heat to medium and cook until the stock is absorbed, about 20 minutes.
  • 4 stir in the tomatoes and pepper to taste.
