Spanokorizo (spinach And Rice Casserole)

Ingredients
- Servings: 6
- 1/2 cup olive oil
- 6 green onions, finely chopped
- 3 lbs fresh spinach, washed, trimmed, and coarsely chopped
- 1 1/2 cups long-grain rice
- 3 tablespoons finely chopped fresh dill
- 2 cups water
- salt
- fresh ground pepper
- 2 lemons, cut into wedges
Recipe
- 1 heat the oil in a large pot.
- 2 saute the onions until soft, about 3 minutes.
- 3 stir in the spinach and saute until wilted, about 3 minutes.
- 4 add the rice, dill, water, salt and pepper. stir thoroughly, and cover. simmer about 15 - 20 minutes until the rice is cooked and the liquid is absorbed.
- 5 serve warm, garnished with lemon wedges.
