Spanokorizo (spinach And Rice Casserole)

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1/2 cup olive oil
  • 6 green onions, finely chopped
  • 3 lbs fresh spinach, washed, trimmed, and coarsely chopped
  • 1 1/2 cups long-grain rice
  • 3 tablespoons finely chopped fresh dill
  • 2 cups water
  • salt
  • fresh ground pepper
  • 2 lemons, cut into wedges

Recipe

  • 1 heat the oil in a large pot.
  • 2 saute the onions until soft, about 3 minutes.
  • 3 stir in the spinach and saute until wilted, about 3 minutes.
  • 4 add the rice, dill, water, salt and pepper. stir thoroughly, and cover. simmer about 15 - 20 minutes until the rice is cooked and the liquid is absorbed.
  • 5 serve warm, garnished with lemon wedges.
