Spinach Ravioli With Roasted Red Pepper Sauce

Ingredients

- 1 lb fresh spinach-cheese ravioli
- 1 1/2 tablespoons red wine vinegar
- 3/8 teaspoon salt
- 3/8 teaspoon pepper
- 2 teaspoons garlic, minced
- 2 1/4 cups diced tomatoes with juice
- 1 1/2 cups roasted red peppers
- 1 tablespoon olive oil
- 1/8 tablespoon crushed red pepper flakes
Recipe
- 1 boil the ravioli according to package directions.
- 2 place remaining ingredients in a blender, cover and puree.
- 3 heat the sauce to you desired temp and serve over ravioli.
