Spiced Tomato Rice

Ingredients

- 12 ounces long grain rice
- 1/2 quart vegetable broth
- 7/8 cup tomato sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 ounce flat leaf parsley, chopped (optional)
Recipe
- 1 place the rice in a pan with the broth and tomato sauce. bring to the boil, cover and simmer for 10-12 minutes.
- 2 take off the heat, stir in the cumin and chili powder, then cover and rest for 5 minutes.
- 3 fluff with a fork and serve scattered with the parsley if using.
