Spiced Tomato Rice

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 12 ounces long grain rice
  • 1/2 quart vegetable broth
  • 7/8 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 ounce flat leaf parsley, chopped (optional)

Recipe

  • 1 place the rice in a pan with the broth and tomato sauce. bring to the boil, cover and simmer for 10-12 minutes.
  • 2 take off the heat, stir in the cumin and chili powder, then cover and rest for 5 minutes.
  • 3 fluff with a fork and serve scattered with the parsley if using.
