Savoury Brown Rice Casserole

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1 cup brown rice
  • 3 slices bacon, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 4 tomatoes, blanched and chopped
  • 2 cups liquid chicken stock
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon salt
  • pepper
  • 25 g butter

Recipe

  • 1 put rice, bacon, half the green and red peppers, tomatoes, stock, onion, garlic, salt and pepper into an oven proof casserole dish.
  • 2 cover with a tight-fitting lid or foil.
  • 3 cook at 180c for 1 1/2 hours or until rice is tender.
  • 4 stir halfway through cooking.
  • 5 just before serving, stir in butter and remaining red and green peppers.
