Spinach Rice

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1 cup cooked rice
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup minced onion
  • 1/4 cup milk, plus
  • 2 tablespoons milk
  • 2 eggs, beaten
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon worcestershire sauce
  • 1/8 teaspoon salt (to taste)
  • 1/8 teaspoon pepper (to taste)
  • 1 tablespoon butter or 1 tablespoon margarine

Recipe

  • 1 drain thawed spinach, and squeeze out excess water (i use kitchen towels for this).
  • 2 combine spinach and the remaining ingredients except butter; mix well.
  • 3 transfer mixture to a greased 1 quart casserole; dot with butter.
  • 4 bake in a preheated 350° oven for 25-30 minutes, until well heated.
