Stuffed Bell Peppers

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 3
  • 2 green peppers, cored
  • 1/3 cup onion, chopped
  • 1 cup carrot, chopped
  • 1 cup tomato, chopped
  • 1 lb ground beef
  • 1 dash olive oil
  • 1 1/2 cups seasoned spanish rice, cooked (i used boxed spanish rice, but you could use anything, really)
  • 1 teaspoon italian seasoning
  • 1 teaspoon garlic salt
  • 1 dash pepper, to taste
  • 1/2 cup cheese, shredded
  • ketchup

Recipe

  • 1 saute onions in olive oil.
  • 2 add beef and brown.
  • 3 meanwhile, core peppers and hollow.
  • 4 either boil for 5 minutes or cook on vegetable setting in microwave.
  • 5 add carrots, garlic, tomatoes, seasonings and rice.
  • 6 stir until combined.
  • 7 fill peppers with filling.
  • 8 bake in 350 for 15 minutes.
  • 9 top with shredded cheese and bake 5 minutes longer until melted.
  • 10 serve with additional filling if desired.
  • 11 top with ketchup if desired.
