Stuffed Bell Peppers

Ingredients
- Servings: 3
- 2 green peppers, cored
- 1/3 cup onion, chopped
- 1 cup carrot, chopped
- 1 cup tomato, chopped
- 1 lb ground beef
- 1 dash olive oil
- 1 1/2 cups seasoned spanish rice, cooked (i used boxed spanish rice, but you could use anything, really)
- 1 teaspoon italian seasoning
- 1 teaspoon garlic salt
- 1 dash pepper, to taste
- 1/2 cup cheese, shredded
- ketchup
Recipe
- 1 saute onions in olive oil.
- 2 add beef and brown.
- 3 meanwhile, core peppers and hollow.
- 4 either boil for 5 minutes or cook on vegetable setting in microwave.
- 5 add carrots, garlic, tomatoes, seasonings and rice.
- 6 stir until combined.
- 7 fill peppers with filling.
- 8 bake in 350 for 15 minutes.
- 9 top with shredded cheese and bake 5 minutes longer until melted.
- 10 serve with additional filling if desired.
- 11 top with ketchup if desired.
