Sausage Zucchini Bake

Ingredients
- Servings: 8
- 1 cup uncooked minute rice (may substitute brown)
- 1 (14 ounce) can cream of mushroom soup
- 1 medium onion, diced
- 1 cup cottage cheese
- 1 cup ricotta cheese
- 1/2 teaspoon oregano
- 1 teaspoon crushed minced garlic
- 1 lb italian sausage (browned)
- 2 cups chopped zucchini
- 1 cup shredded cheese (colby or cheddar)
- 1 (6 ounce) can chopped mushrooms (optional)
Recipe
- 1 preheat oven to 350 degress.
- 2 mix first 6 ingredients in bowl. stir well. then add sausage and zucchini.
- 3 put in 9x13 pan, spread evenly and cover with foil. poke with a few air holes and cook for 45 min at 350 degrees.
- 4 remove from oven, sprinkle cheese evenly on top, recover and cook 15 more minutes.
