Speedy, Green Rice

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 lb fresh spinach, washed and chopped or 1 (10 ounce) package frozen chopped spinach
  • 1/4 cup butter
  • 3 cups instant rice
  • 2 1/3 cups water
  • 2 teaspoons salt
  • 1/2 teaspoon oregano
  • 6 green onions, sliced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons lemon juice
  • 1/2 cup parmesan cheese, grated

Recipe

  • 1 if using fresh spinach, drain well. if using frozen spinach, thaw and drain well.
  • 2 in a large pan, saute spinach in butter for 2 to 3 minutes.
  • 3 stir in rice, water, salt and oregano; bring to a boil. cover and simmer until all liquid is absorbed, about 5 minutes.
  • 4 stir in onion, lemon juice and parsley; heat through.
  • 5 sprinkle with parmesan cheese when serving.
