Speedy, Green Rice

Ingredients
- Servings: 6
- 1 lb fresh spinach, washed and chopped or 1 (10 ounce) package frozen chopped spinach
- 1/4 cup butter
- 3 cups instant rice
- 2 1/3 cups water
- 2 teaspoons salt
- 1/2 teaspoon oregano
- 6 green onions, sliced
- 2 tablespoons parsley, chopped
- 2 tablespoons lemon juice
- 1/2 cup parmesan cheese, grated
Recipe
- 1 if using fresh spinach, drain well. if using frozen spinach, thaw and drain well.
- 2 in a large pan, saute spinach in butter for 2 to 3 minutes.
- 3 stir in rice, water, salt and oregano; bring to a boil. cover and simmer until all liquid is absorbed, about 5 minutes.
- 4 stir in onion, lemon juice and parsley; heat through.
- 5 sprinkle with parmesan cheese when serving.
