Spinach And Penne

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 (28 ounce) can tomatoes
  • 1/2 cup kalamata olive, pitted and chopped
  • 4 cups fresh spinach, chopped
  • 1 tablespoon fresh parsley
  • 8 ounces penne

Recipe

  • 1 heat oil in a big pan.
  • 2 add onion on medium for 3 minutes.
  • 3 add tomatoes.
  • 4 bring to a boil and let simmer.
  • 5 cover up for 20 minutes.
  • 6 add olives, spinach and parsley.
  • 7 cook for 5 minutes.
