Slow Cooker Hoppin' John

Ingredients
- 3 (14 1/2 ounce) cans black-eyed peas (i prefer glory brand)
- 1 (16 ounce) bag frozen chopped collard greens
- 1 cup chopped onion
- 3/4 cup chopped carrot
- 3/4 cup chopped celery
- 3/4 lb ham, cut in bite sized pieces
- 1 can chicken broth
- 2 teaspoons thyme
- 1/2 teaspoon red pepper flakes
- 1 cup uncooked rice
Recipe
- 1 in a 5 to 6 quart slow cooker put ham, carrots, onion and celery as first layer.
- 2 add 3 cans blackeyed peas and collard greens as second layer.
- 3 mix spices in chicken broth and pour over all.
- 4 cook on low for 8 to 10 hours, depending on your slow cooker.
- 5 cook rice according to directions on package and add to hoppin' john just before serving.
- 6 add more chicken broth if needed.
- 7 makes 10 to 12 servings.
