Spinach Salad

Ingredients

  • Servings: 4
  • 284 g baby spinach
  • 2 cups bean sprouts
  • 2 cups cooked rice
  • 2 cups sliced mushrooms
  • 2 cups of diced celery
  • 1 cup of diced green pepper
  • 1 cup unsalted cashews
  • 2/3 cup raisins
  • 3 scallions, finely sliced
  • fresh garlic (i add alot, maybe 4-5 cloves)
  • 1/2 cup safflower oil (or your preferred kind)
  • 1/3 cup soya sauce (i prefer sodium reduced)

Recipe

  • 1 mix all the salad ingrediants together, except for the cashews.
  • 2 just before serving, toss with the dressing, and add the cashews.
