Spinach Salad

Ingredients
- Servings: 4
- 284 g baby spinach
- 2 cups bean sprouts
- 2 cups cooked rice
- 2 cups sliced mushrooms
- 2 cups of diced celery
- 1 cup of diced green pepper
- 1 cup unsalted cashews
- 2/3 cup raisins
- 3 scallions, finely sliced
- fresh garlic (i add alot, maybe 4-5 cloves)
- 1/2 cup safflower oil (or your preferred kind)
- 1/3 cup soya sauce (i prefer sodium reduced)
Recipe
- 1 mix all the salad ingrediants together, except for the cashews.
- 2 just before serving, toss with the dressing, and add the cashews.
