Ingredients

- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 chopped garlic cloves
- 1 (8 ounce) can black beans, rinsed and drained
- 1 cup jarred chunky salsa
- 1 tablespoon fresh parsley or 1 tablespoon cilantro
- 1/2 teaspoon cumin
- 1 tablespoon taco seasoning
- 1 tablespoon hot sauce
- 2 cups rice
- 2 tablespoons shredded cheese (optional)
Recipe
- 1 sauté onion and garlic in oil.
- 2 add beans and salsa.
- 3 add seasonings to taste.
- 4 simmer until heated through.
- 5 serve over rice and garnish with cheese.
