Super Quick Black Beans And Rice

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 chopped garlic cloves
  • 1 (8 ounce) can black beans, rinsed and drained
  • 1 cup jarred chunky salsa
  • 1 tablespoon fresh parsley or 1 tablespoon cilantro
  • 1/2 teaspoon cumin
  • 1 tablespoon taco seasoning
  • 1 tablespoon hot sauce
  • 2 cups rice
  • 2 tablespoons shredded cheese (optional)

Recipe

  • 1 sauté onion and garlic in oil.
  • 2 add beans and salsa.
  • 3 add seasonings to taste.
  • 4 simmer until heated through.
  • 5 serve over rice and garnish with cheese.
