Spicy Chicken Pasta

Ingredients

  • Servings: 2
  • 1/2 cup penne pasta
  • 4 chicken breasts, cut into 1-inch pieces
  • 1 plum tomato, sliced
  • 2 tablespoons tomato paste
  • 2 garlic cloves, minced
  • 1/4 chili flakes
  • 1 tablespoon lemon juice
  • 3 cups baby spinach
  • 1 tablespoon olive oil
  • salt

Recipe

  • 1 in a large pot of boiling unsalted water cook the penne pasta until al dente, adding the chicken during the last 2 mins of cooking.
  • 2 reserve 1/4 cup pasta water.
  • 3 drain the pasta and chicken, return to pot.
  • 4 in the pot, add the tomato , tomato paste, garlic, oil ,chili flakes and spinach. season with salt and toss it well.
  • 5 cook over medium heat tossing until spinach is barely wilted about 1 minute.
  • 6 remove pot from th heat, stir in the the lemon juice and enough pasta water to make a thin sauce that coats the pasta.
  • 7 season with salt if necessary and serve immediately.
