Spaghetti Piccata

Ingredients
- Servings: 6
- 1 lb spaghetti
- 1/4 cup olive oil
- 3 cups fresh mushrooms, sliced
- 1 garlic clove, minced
- 1 cup dry wine
- 1/3 cup fresh lemon juice
- 2 teaspoons capers
- 1 tablespoon fresh parsley, chopped (flat-leaf)
- salt & pepper
Recipe
- 1 cook spaghetti according to package directions.
- 2 meanwhile, heat olive oil in skillet over med. heat.
- 3 saute` mushrooms and garlic lightly for 2 minutes.
- 4 add wine and lemon juice.
- 5 simmer over low heat until liquid has cooked down by one-half (about 4 min.).
- 6 stir capers into sauce and heat thoroughly.
- 7 add cooked spaghetti to skillet and season with salt and pepper.
- 8 sprinkle with parsley.
- 9 garnish with lemon wedge and serve.
