Spaghetti Piccata

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb spaghetti
  • 1/4 cup olive oil
  • 3 cups fresh mushrooms, sliced
  • 1 garlic clove, minced
  • 1 cup dry wine
  • 1/3 cup fresh lemon juice
  • 2 teaspoons capers
  • 1 tablespoon fresh parsley, chopped (flat-leaf)
  • salt & pepper

Recipe

  • 1 cook spaghetti according to package directions.
  • 2 meanwhile, heat olive oil in skillet over med. heat.
  • 3 saute` mushrooms and garlic lightly for 2 minutes.
  • 4 add wine and lemon juice.
  • 5 simmer over low heat until liquid has cooked down by one-half (about 4 min.).
  • 6 stir capers into sauce and heat thoroughly.
  • 7 add cooked spaghetti to skillet and season with salt and pepper.
  • 8 sprinkle with parsley.
  • 9 garnish with lemon wedge and serve.
