Spicy Three Pepper Shrimp

Total Time: 36 mins Preparation Time: 30 mins Cook Time: 6 mins

Ingredients

  • Servings: 2
  • 2 tablespoons olive oil (divided)
  • 2 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon fresh ginger, peeled and grated
  • 1/2 teaspoon salt
  • 1 dash ground black pepper
  • 1 lb jumbo shrimp, peeled and deveined
  • 1 red bell pepper, sliced and cut in half horizontally
  • 1 tablespoon finely chopped fresh cilantro
  • 2 cups prepared saffron rice

Recipe

  • 1 combine 1 tbsp olive oil and the next 6 ingredients, garlic through shrimp. stir and let rest for at least 15 minutes. if refrigerated, the mixture can rest up to two hours.
  • 2 heat the oil in a large nonstick skillet over medium-high heat. add the peppers and saute about 2 minutes. add the shrimp mixture and saute for 5 - 6 minutes, or until shrimp are opaque and cooked through. be careful not to overcook the shrimp.
  • 3 sprinkle the cilantro on the shrimp and serve with the rice.
