Summer Love Muffins

Total Time: 44 mins Preparation Time: 20 mins Cook Time: 24 mins

Ingredients

  • 1/2 cup coconut oil
  • 1 cup brown rice syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 cups spelt flour
  • 1/2 cup cornmeal
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 cup chopped fresh fruit
  • 1/2 cup chopped nuts

Recipe

  • 1 blend the coconut oil and brown rice syrup with a hand mixer or spoon until well blended. add eggs and extracts and blend until smooth.
  • 2 mix the flour, corn meal, baking powder and salt together.
  • 3 then add flour mixture to your liquid mixture and blend well, not over mixing. add milk and blend until smooth. fold in fruit and nuts.
  • 4 suggestions for fruit and nuts: blueberries, fresh currants, peaches, strawberries, walnuts, sunflower seeds, or almonds.
  • 5 bake at 375 for 24 minutes. check with a toothpick for doneness. let cool on racks or pot holders. tip the muffins up on their sides to cool evenly. let cool for at least 10 minutes before enjoying.
