Summer Harvest Stew

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/3 cup olive oil
  • 3 medium onions, cut into wedges
  • 4 large garlic cloves, crushed
  • 3 baking potatoes, peeled and cut into slices
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 1 lb whole tomato, undrained
  • pepper, to taste
  • garlic salt, to taste

Recipe

  • 1 heat oil in large dutch oven.
  • 2 add onions and garlic, cook till onions are translucent.
  • 3 reduce heat, add potatoes, bell peppers and tomatoes.
  • 4 season with garlic salt and pepper.
  • 5 cover and cook till potatoes are tender, stirring occasionally and adding water as needed.
  • 6 serve over rice or pasta.
