Salsa Mac & Colby Cheese

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 4 cups macaroni
  • 1 medium tomato, chopped
  • 1 medium green pepper, chopped
  • 1 small onion, chopped
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3/4 cup milk
  • 1/2 cup salsa
  • 8 cups shredded colby (i also use cheddar and mozzarella)

  • granulated garlic

Recipe

  • 1 cook macaroni according to package directions. drain.
  • 2 add tomato and green pepper to macaroni.
  • 3 preheat oven to 350°f.
  • 4 in med saucepan, sauté onion in butter until translucent.
  • 5 stir in flour, pepper and garlic to taste.
  • 6 add milk and salsa.
  • 7 add cheese and stir until melted.
  • 8 add cheese mixture to pasta and veggies, stir to evenly coat.
  • 9 pour into a 9x13in pan.
  • 10 bake for 25-30 minutes.
  • 11 cool 10 minutes before serving.
