Santa Fe Rice And Beans

Ingredients

- 2 cups cooked rice
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 1 (14 1/2 ounce) can diced tomatoes
- 1 cup salsa
- 1 cup low-fat sour cream
- 2 cups 2% mexican cheese blend, divided
- 1 medium red onion
- 1 bell pepper
- 2 medium zucchini
Recipe
- 1 preheat oven to 350.
- 2 in a large bowl, all ingredients except 1 cup cheese. season with salt and pepper to taste.
- 3 transfer to a greased 9x13 pan.
- 4 bake uncovered for 30 minutes.
- 5 sprinkle with reserved cheese and bake until cheese melts.
