Spicy Chinese Chicken

Ingredients

  • Servings: 6
  • 3/4 cup chicken stock
  • 3 tablespoons rice vinegar
  • 2 teaspoons coconut sugar crystals
  • 1/4 cup soy sauce
  • 4 green onions, cut in 2 inch pieces
  • 4 garlic cloves, minced
  • 1 tablespoon minced ginger
  • 1 teaspoon black pepper
  • 3 lbs chicken thighs (bone in)
  • 1 chili pepper, minced
  • 1 tablespoon arrowroot (dissolved in 2 t cold water)

Recipe

  • 1 in bowl, combine chicken stock, vinegar, coconut sugar, and soy sauce, stirring well to ensure sugar is dissolved.
  • 2 add green onions, garlic, ginger and pepper.
  • 3 arrange chicken over bottom of slow cooker. cover with sauce.
  • 4 cover and cook on low for 6 hours.
  • 5 with slotted spoon, remove chicken to a platter and keep warm. strain liquid into saucepan.
  • 6 add chile pepper to taste and arrowroot. simmer on low for 3 minutes. pour over chicken.
