Spicy Chinese Chicken

Ingredients

- 3/4 cup chicken stock
- 3 tablespoons rice vinegar
- 2 teaspoons coconut sugar crystals
- 1/4 cup soy sauce
- 4 green onions, cut in 2 inch pieces
- 4 garlic cloves, minced
- 1 tablespoon minced ginger
- 1 teaspoon black pepper
- 3 lbs chicken thighs (bone in)
- 1 chili pepper, minced
- 1 tablespoon arrowroot (dissolved in 2 t cold water)
Recipe
- 1 in bowl, combine chicken stock, vinegar, coconut sugar, and soy sauce, stirring well to ensure sugar is dissolved.
- 2 add green onions, garlic, ginger and pepper.
- 3 arrange chicken over bottom of slow cooker. cover with sauce.
- 4 cover and cook on low for 6 hours.
- 5 with slotted spoon, remove chicken to a platter and keep warm. strain liquid into saucepan.
- 6 add chile pepper to taste and arrowroot. simmer on low for 3 minutes. pour over chicken.
