Red Beans And Rice

Ingredients

  • Servings: 8
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 4 stalks celery
  • 1 yellow onion
  • 2 bell peppers
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 2 bay leaves
  • 1/2 tablespoon paprika
  • 48 ounces vegetable broth
  • 2 (16 ounce) cans red beans
  • 28 ounces smoke sausage links

Recipe

  • 1 dice the garlic cloves, onion, celery, and peppers, and add to a heated large pot with the olive oil. cook over medium heat for about 8 minutes (until softened).
  • 2 add the vegetable broth, thyme, oregano, bay leaves, and beans to the pot.
  • 3 bring to a boil, cover, reduce heat and simmer for 2 hours or more.
  • 4 remove the bay leaves, and add the sliced sausage.
  • 5 simmer 45 minutes.
  • 6 serve with rice.
