Spicy Chick-peas And Rice

Ingredients

  • Servings: 6
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups long grain brown rice, cooked
  • 1 (16 ounce) can chickpeas, drained
  • 1/2 cup water
  • 2 tablespoons parsley, chopped (fresh)
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon fresh ground pepper

Recipe

  • 1 saute the onion and garlic in olive oil in a large skillet over medium-high heat, stirring constantly, until tender.
  • 2 stir in the cooked rice and the remaining ingredients. cover the skillet, reduce the heat to low, and simmer for 15 to 20 minutes, stirring occasionally.
