Spicy Couscous With Mushrooms

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 3 tablespoons butter
  • 1 cup couscous, plus
  • 3 tablespoons couscous
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon coriander
  • 1 small cinnamon stick
  • 2 cups vegetable stock or 2 cups chicken stock
  • 1/2 lb mushroom
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 star anise
  • 1 bunch chives, chopped

Recipe

  • 1 melt butter in a saucepan, add mushrooms, cover and cook until soft.
  • 2 stir in couscous, salt, turmeric, cumin, coriander, anise, cinnamon and chives.
  • 3 cook for 1-2 minutes.
  • 4 pour vegetable stock over the mixture, cover and set aside for 5 minutes until the liquid is absorbed.
  • 5 fluff up and serve.
