Spicy Couscous With Mushrooms

Ingredients
- Servings: 6
- 3 tablespoons butter
- 1 cup couscous, plus
- 3 tablespoons couscous
- 1/2 teaspoon turmeric
- 1/2 teaspoon coriander
- 1 small cinnamon stick
- 2 cups vegetable stock or 2 cups chicken stock
- 1/2 lb mushroom
- 1/2 teaspoon salt
- 1/2 teaspoon cumin
- 1 star anise
- 1 bunch chives, chopped
Recipe
- 1 melt butter in a saucepan, add mushrooms, cover and cook until soft.
- 2 stir in couscous, salt, turmeric, cumin, coriander, anise, cinnamon and chives.
- 3 cook for 1-2 minutes.
- 4 pour vegetable stock over the mixture, cover and set aside for 5 minutes until the liquid is absorbed.
- 5 fluff up and serve.
