Stevedoro Casserole

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 hard-boiled eggs, sliced
  • 2 tomatoes, sliced
  • 220 g tuna, drained
  • 1 tablespoon butter
  • 125 g mushrooms, sliced
  • 3/4 cup light sour cream
  • 2 eggs, beaten
  • 2 teaspoons soy sauce
  • 4 tablespoons parmesan cheese, grated
  • pepper, to taste

Recipe

  • 1 preheat oven to 190.c.
  • 2 place sliced eggs, tomato and tuna in layers in a buttered casserole or ovenproof dish.
  • 3 melt butter & saute mushrooms before adding to the casserole.
  • 4 mix together all other ingredients except cheese and pour over the casserole, sprinkle with grated cheese.
  • 5 cook in a moderately hot oven 190.c for 30-40 mins or until mixture is set. turn up heat for last 5 mins to crisp to cheese top.
  • 6 serve with rice or spaghetti.
