Stevedoro Casserole

Ingredients
- Servings: 4
- 4 hard-boiled eggs, sliced
- 2 tomatoes, sliced
- 220 g tuna, drained
- 1 tablespoon butter
- 125 g mushrooms, sliced
- 3/4 cup light sour cream
- 2 eggs, beaten
- 2 teaspoons soy sauce
- 4 tablespoons parmesan cheese, grated
- pepper, to taste
Recipe
- 1 preheat oven to 190.c.
- 2 place sliced eggs, tomato and tuna in layers in a buttered casserole or ovenproof dish.
- 3 melt butter & saute mushrooms before adding to the casserole.
- 4 mix together all other ingredients except cheese and pour over the casserole, sprinkle with grated cheese.
- 5 cook in a moderately hot oven 190.c for 30-40 mins or until mixture is set. turn up heat for last 5 mins to crisp to cheese top.
- 6 serve with rice or spaghetti.
