Stewed "stufato" Fava Beans

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 ounces dry fava beans, large size
  • 1 tablespoon olive oil
  • 2 scallions, chopped
  • 1 garlic clove, minced
  • 1 tablespoon basil, fresh and chopped
  • 1/4 teaspoon dried rosemary (optional)
  • crushed red pepper flakes, dash
  • 1 cup water
  • 1 goya chicken bouillon cube
  • salt and pepper
  • 4 cups water, to cook beans

Recipe

  • 1 sort and rinse beans.
  • 2 .bring 4 cups water to boil in large saucepan.
  • 3 stir in beans and boil for 10 minutes.
  • 4 drain and rinse in cold water.
  • 5 peel outer skin of lava beans and throw out skins.
  • 6 heat olive oil in large saucepan.
  • 7 add scallions and garlic and cook for 2 minutes.
  • 8 add beans and remaining ingredient to pan.
  • 9 bring ingredients to boil, cover and low heat and simmer until beans are tender.
  • 10 add more water if needed.
  • 11 serve over steamed rice.
