Quick Rice Pudding

Ingredients

  • Servings: 4
  • 2 cups cooked long-grain rice
  • 1 (12 ounce) can evaporated milk
  • 1/4 cup sugar
  • 1 cinnamon stick
  • 1/2 cup raisins (optional)
  • ground cinnamon, for garnish

Recipe

  • 1 combine ingredients in a small saucepan over medium heat.
  • 2 bring to a boil, reduce heat to low, cover, and simmer 10-15 minutes until thick and creamy. be careful not to let it scorch.
  • 3 remove cinnamon stick before refrigerating.
  • 4 serve cold, with a pinch of cinnamon on top.
